  • Wooden spoon
  • Rubber spatula
  • Fine mesh strainer
  • Glass storage jar

Ingredients

  • 1 cup granulated sugar
  • ¾ cup water
  • ½ cup distilled vinegar
  • ½ cup tomato paste
  • ¼ cup molasses
  • 2 tablespoons modified potato starch
  • 1 teaspoon salt
  • 1 teaspoon fruit juice color
  • 1 teaspoon natural smoke flavor
  • 1 tablespoon mustard flour
  • 1 teaspoon paprika
  • ½ teaspoon ground mixed spice
  • 1 tablespoon dried onion flakes
  • 2 teaspoons dried garlic
  • ½ teaspoon chili pepper
  • 1 teaspoon autolyzed yeast extract
  • 1 teaspoon natural flavor
  • ½ teaspoon yeast extract
  • 1 teaspoon garlic powder

Instructions

Step 1

  • Whisk sugar, water, distilled vinegar, tomato paste, molasses, salt, mustard powder, smoked paprika, paprika, chili powder, onion powder, garlic powder, black pepper, yeast extract, and liquid smoke together in a medium saucepan until fully blended.

Step 2

  • Place the saucepan over medium heat and stir gently as the mixture warms. Once tiny bubbles begin appearing around the edges, reduce the heat to maintain a gentle simmer.

Step 3

  • Mix the potato starch and water until completely smooth. Slowly pour the slurry into the saucepan while stirring continuously to prevent lumps from forming.

Step 4

  • Allow the sauce to cook quietly until it becomes glossy and coats the back of a spoon. Stir occasionally to keep the texture even and prevent sticking on the bottom.

Step 5

  • Remove the saucepan from the heat and let the sauce cool naturally. Transfer it to a clean glass jar, refrigerate for several hours, then serve anywhere a sweet, smoky barbecue sauce is desired.
