  • ½ cup finely chopped yellow onion
  • 1 tablespoon extra virgin olive oil
  • ½ cup firmly packed light brown sugar
  • ¼ cup Worcestershire sauce
  • 2 tablespoons freshly minced garlic about 4 garlic cloves
  • 2 cups tomato ketchup
  • 1 tablespoon prepared yellow mustard
  • ¼ cup apple cider vinegar
  • 2 tablespoons bourbon whiskey
  • ¼ teaspoon Tabasco hot sauce
  • ¼ teaspoon liquid smoke
  • 2 tablespoons unsulfured molasses

Instructions
 

Step 1

  • Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and stir gently for several minutes until soft and translucent. Mix in the minced garlic and cook briefly until fragrant without allowing it to brown.

Step 2

  • Pour the ketchup into the pan, then add the brown sugar, Worcestershire sauce, yellow mustard, apple cider vinegar, bourbon, molasses, Tabasco sauce, and liquid smoke. Stir continuously until every ingredient is evenly incorporated.

Step 3

  • Lower the heat once small bubbles begin to appear around the edges. Allow the mixture to cook slowly, stirring occasionally so nothing sticks to the bottom of the pan.

Step 4

  • Continue heating until the consistency becomes thicker and glossy. The onions will become tender while the sugar completely dissolves into the sauce, creating a smooth texture.

Step 5

  • Remove the saucepan from the heat. Leave the mixture to cool for several minutes. For a silky finish, carefully blend the sauce until completely smooth, or leave it slightly chunky if preferred.

Step 6

  • Transfer the finished barbecue sauce into a clean glass jar or airtight container. Refrigerate until chilled before serving. Brush it over grilled meats, use it as a dipping sauce, or spread it onto burgers and sandwiches.
