Ingredients
  

Vanilla Cake

Chocolate Mousse

  • 1 tablespoon water
  • ¾ teaspoon unflavored gelatin powder
  • 1 tablespoon granulated sugar
  • 1 cup chopped milk or semi-sweet baking chocolate

Chocolate Ganache

  • cups granulated sugar
  • 1⅓ cups chopped dark chocolate
  • cups heavy cream
  • 6 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions
 

Step 1

  • Heat the oven to 350°F (175°C). Grease two 8-inch cake pans, line the bottoms with parchment paper, then lightly dust the sides with flour.

Step 2

  • Whisk the flour, baking powder, and salt until evenly blended. Beat the butter and sugar until pale and airy. Mix in the eggs individually, followed by the vanilla. Alternate the dry mixture and milk until a smooth batter forms.

Step 3

  • Divide the batter evenly between the prepared pans. Bake for 28–32 minutes until a toothpick inserted into the center comes out clean. Cool for 10 minutes before transferring the layers onto a wire rack.

Step 4

  • Sprinkle the gelatin over the water and allow it to bloom for several minutes. Warm a small amount of cream together with the sugar until hot but not boiling. Stir in the gelatin until dissolved, then pour over the chopped chocolate. Mix until glossy and completely melted.

Step 5

  • Beat the remaining chilled cream until soft peaks develop. Fold it into the cooled chocolate mixture using gentle strokes until smooth and airy. Refrigerate briefly if needed so it becomes easier to spread.

Step 6

  • Place one cake layer onto a serving plate. Cover the surface evenly using the prepared mousse. Position the remaining cake layer on top and smooth the edges. Chill until the filling becomes firm.

Step 7

  • Combine the cream, sugar, butter, vanilla, and salt in a saucepan. Heat until steaming. Pour the hot mixture over the chopped dark chocolate. Stir patiently until completely smooth and shiny.

Step 8

  • Allow the ganache to cool until slightly thickened. Pour it over the chilled cake, encouraging it to flow naturally across the surface and around the sides. Refrigerate until the coating sets.

Step 9

  • Remove the dessert from the refrigerator about 20 minutes before slicing. Finish with chocolate curls, cocoa powder, berries, or whipped cream if desired, then serve.
