Equipment

  • Medium saucepan
  • Wooden spoon
  • Measuring cups
  • Measuring spoons
  • Fine mesh strainer
  • Heatproof bowl
  • Clean glass jar
  • Immersion blender or regular blender

Ingredients

  • 1 1/2 tablespoons Worcestershire sauce
  • 1 cup mixed berries such as blueberries, raspberries, blackberries, chokecherries, gooseberries, cranberries, strawberries, boysenberries, or brambleberries
  • 1/3 cup pure maple syrup
  • 3 tablespoons apple cider vinegar
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon kosher salt
  • 2 tablespoons water

Instructions

Step 1

  • Place the mixed berries and water in a medium saucepan. Cook over medium heat for 5–7 minutes, stirring often, until the berries become soft and release their juice.

Step 2

  • Reduce the heat to low. Add maple syrup, apple cider vinegar, and Worcestershire sauce. Stir well so the liquids mix evenly into the softened berries.

Step 3

  • Add smoked paprika, dried rosemary, dried thyme, dried oregano, garlic powder, onion powder, and kosher salt. Stir for about 1 minute to distribute the seasonings throughout the berry mixture.

Step 4

  • Keep the saucepan over low heat and let the mixture simmer for 10–12 minutes. Stir every few minutes to prevent sticking. The berries should break down, and the liquid should begin to look thick.

Step 5

  • Remove the saucepan from the heat and let the mixture cool slightly. Blend until smooth using an immersion blender or regular blender. Pour the sauce through a fine-mesh strainer and press gently to remove seeds and berry skins.

Step 6

  • Return the strained sauce to the saucepan. Cook over low heat for another 5–8 minutes, stirring frequently, until it becomes thick enough to coat the back of a spoon. Remove from the heat and let it cool before serving or transferring it to a clean jar.
